“Katsuretsu” comes from “cutlets”, here fried in thick, crispy breadcrumbs! “Tonkatsu” indicates pork meat, the most classic, but there are also “Gyukatsu” with beef, not forgetting their shrimp cousins, “Ebi-fry”, etc.
